L'escargot Bleu
Frédéric Berkmiller, chef-patron established in the UK since 1988, hasn’t lost anything of his French culture. He recently opened L’escargot Bleu restaurant at 56 Broughton Street in Edinburgh, L’escargot Blanc at 17 Queensferry Street and soon after L’epicerie, his own version of a French delicatessen, also at 56A Broughton Street. Fred thinks that Acquamara is a great addition to the extensively growing Scottish larder which he is so passionate about. He sees potential in the use of Acquamara with meats and vegetables as well as fish.
